As the leaves start to change and the air becomes crisp, there's a particular flavor that signifies the arrival of fall - brown butter! But what if I told you that you can take the deliciousness of brown butter up a notch? Enter Brown Butter Carnivore Candy, the ultimate fall treat for carnivores that's perfect for those who want to relish the flavors of autumn without all the sugar or sweeteners. In this recipe, we'll guide you through the magical transformation of butter into liquid gold and create delectable candy that capture the nutty aroma of browned butter. Plus, we'll delve into the nutritional benefits of using grass-fed butter in your favorite dishes.

Why Choose Grass-Fed Butter: Now, you might wonder why we recommend using grass-fed butter for this recipe. The answer lies in the exceptional quality and health benefits it brings to your table. Grass-fed butter, like the popular Kerry Gold brand, is produced from the milk of cows that graze on natural pastures. Here are a few reasons why grass-fed butter is a great choice:

  • Healthy Fats: Grass-fed butter is a rich source of healthy fats, particularly omega-3 fatty acids and conjugated linoleic acid (CLA). These fats have been linked to various health benefits, including improved heart health and reduced inflammation.

  • Nutrient Density: It's packed with essential nutrients like vitamins A, D, E, and K2. These vitamins play vital roles in maintaining overall health.

  • Supports Hormone Balance: Increasing healthy fat intake can be beneficial for hormone regulation. Healthy fats provide the raw materials necessary for hormone production and balance.

Tips for Successfully Making Brown Butter Candy Without Burning the Butter:

  • Use a Heavy-Bottomed Pan: Opt for a saucepan with a heavy bottom to ensure even heating and prevent hot spots that can lead to burning.

  • Low and Slow: Keep the heat on medium-low throughout the browning process to gently coax out the nutty flavors in the butter.

  • Stay Vigilant: Watch the butter closely as it melts and starts to brown. The transformation can happen quickly, so don't walk away from the stove.

  • Stir Constantly: Stir the butter constantly with a silicone heat proof spatula to distribute the heat evenly and prevent the bottom from burning.

  • Nose Knows: Rely on your sense of smell – the nutty aroma is a telltale sign that the butter is browning beautifully.

  • Remove Promptly: Once you achieve your desired brownness, remove the saucepan from the heat immediately. The residual heat can continue to cook the butter.

  • Transfer to Heatproof Bowl: Pour the browned butter into a heatproof bowl right away to stop the cooking process and prevent burning.

  • Stir Before Filling Molds: Before filling your silicone molds, give the browned butter a gentle stir to evenly distribute the browned bits for maximum flavor in each candy bite.

  • Adjust the serving size based on the size of your candy molds: I used 1 tbsp for this recipe because the pumpkin molds are on the larger side. For brown butter bites 1 tsp may be more appropriate.

  • Freeze for Best Results: Freezing the candy bites ensures they solidify perfectly and maintain their shape. Leave them in the freezer for about an hour.

  • Serve Chilled or as a Garnish: Enjoy the frozen candy bites straight from the freezer for a delightful crunch, or use them as a gourmet garnish to elevate your favorite dishes with a burst of nutty flavor.

Ingredients

  • 2 sticks of butter salted or unsalted

EQUIPMENT

Directions

  1. Start by placing your saucepan over medium-low heat and adding the 2 sticks of butter. My favorite butter for this recipe is Kerry Gold grass-fed salted butter for the best flavor.

  2. As the butter melts, keep a close eye on it. The magic begins when the butter starts to foam and bubble. This is the water in the butter evaporating.

  3. After a few minutes, you'll notice the butter turning a beautiful, light golden color. At this point, a delightful nutty aroma will fill your kitchen. This is where the flavor truly develops.

  4. Let the butter brown to your liking, but exercise caution not to overcook it, as it can quickly burn. The key is to achieve that perfect balance of nuttiness without crossing over into bitterness.

  5. Once you've reached your desired brownness, remove the saucepan from the heat immediately to prevent any further cooking.

  6. Carefully pour your browned butter into a heat safe bowl. You'll notice those irresistible browned bits; these will set beautifully in your candy.

  7. Now, using a tablespoon, fill each silicone mold with the browned butter mixture. This step allows you to create perfectly portioned bites and ensures that the brown bits are distributed evenly. If you pour the the butter into the molds you will end up with candy at the end that has too much brown bits, making them hard to eat.

  8. Place the filled silicone molds in the freezer and let them sit until the butter bites are solid, typically for about an hour.

  9. Once they are solid, remove the butter bites from the molds and transfer them to an airtight container. You can keep them in the freezer for a longer shelf life.

  10. Enjoy your Brown Butter Candy Bites straight from the freezer! The frozen texture adds a delightful crunch to these nutty treats. You can also serve them on top of your favorite dishes for an elevated flavor experience. They make a fantastic garnish for everything from desserts to savory dishes, enhancing the overall taste and adding a touch of luxury to your meals.

As you indulge in these Brown Butter Candy Bites, you're not only savoring the essence of fall but also reaping the benefits of nutrient-rich grass-fed butter. Whether enjoyed frozen as a delightful treat or used as a gourmet garnish, these bites will elevate your culinary experience. So, give this recipe a try and enjoy the flavors of the season in a whole new way!
