CARNIVORE CHICKEN TENDERS WITH PORK RIND PANKO

This recipe is delicious, easy, and kid friendly for little carnivores!

This is one of my son's favorite carnivore meals. As a Mom I want my son to be as healthy as he can be, but I also don't want him to feel deprived. So, I'm always looking for ways to make his favorite meals carnivore style.

Before you get started, here are some recipe tips to set you up for success! I have found that this recipe is the easiest when you cook the chicken tenders in an air fryer. My favorite air fryer so far is the Ninja Foodi Indoor Grill. It grills, air fries, roasts, bakes, broil, and dehydrates. The air fryer does a great job at crisping food.
If you don't have an air fryer you can also deep fry the tenders in lard or bake them in the oven at 425F. Deep frying in lard makes the tenders extra crispy and flavorful. It's my favorite way to make them, but I usually opt for the air fryer because it's easier when it comes to clean up!
Pork rind crumbs are a lifesaver when it comes to a low carb, keto, or carnivore substitute for battered or breaded dishes! For the pork rind crumbs, I make my own by grinding them in a food processor. It's not as convenient as buying them, but it's much more affordable! I will actually grind up several bags of pork rinds at a time and store them in a container, so I always have a good amount on hand for other dishes that I make. You can add any seasonings you like to the pork rind crumbs.
If you're like me, you don't want to be in the kitchen cooking every meal! So you'll be happy to know that this recipe works well for meal prep or left overs. The tenders reheat well in the oven or air fryer, and you can even make up a big batch and freeze them! I doubled this recipe and used 2 lbs of chicken tenderloins, so my family could have left overs.
Lastly, placing the tenders on a cooling rack after removing them from the air fryer will help keep the tenders crispy. Making sure that the tenders are completely cool before storing left overs will also help keep them crispy.

1 lb Chicken tenderloins
1 1/2 cup pork rind crumbs
1 egg beaten
1/4 tsp sea salt
1/4 tsp black pepper
Optional dipping sauce
Directions
Preheat air fryer.
Dip the tenders in the beaten egg and then roll them in the pork rind crumbs until all sides are coated well.
Cook in a single layers in the air fryer for 10 minutes, flipping them over half way through.
Remove the tenders from the air fryer and place on a cooling rack. The tenders can be eaten right away. Serve with optional dipping sauce if you prefer.
