CARNIVORE MEXICAN PIZZA

I was inspired to create this recipe for Cinco de Mayo. I had a bunch of egg whites in the refrigerator that I needed to use, so I thought a Mexican style pizza with a cloud or egg white crust would be perfect! This Mexican pizza was so delicious and cheesy! I am a minimalist when it comes to cooking, but feel free to add any of your favorite low-carb, keto, or carnivore toppings. Some other toppings that would be delicious on this pizza include black olives, tomatoes, avocado, chili peppers, cilantro, green peppers, etc.

Ingredients
Cloud Crust:
6 egg whites
1/2 cup egg white protein powder
1 tbsp beef gelatin powder
1/2 tsp sea salt
3 egg yolks
1/4 cup stick of butter grated (1/2 stick or 4 tbsp)
1 cup shredded cheddar cheese
Toppings:
2 lb ground beef cooked
Taco seasoning to taste
12 oz cream cheese softened
1 cup sour cream
4 cups shredded cheddar cheese
Any of your favorite low carb, keto, or carnivore toppings
Directions
Preheat the oven to 400°F and and grease a 16" pizza pan with your preferred fat. Put the 1/2 stick of butter in the freezer.
Add the egg whites to the bowl of a stand mixer and whip until stiff. Then, turn the speed to low and add in the egg white protein powder followed by the beef gelatin, and salt. Finally add in the egg yolks one at a time. Mix until well combined.
Remove the butter from the freezer and grate it into the mixing bowl. Next, add 1 cup of shredded cheddar cheese to the mixing bowl. Fold the grated butter and shredded cheddar cheese into the egg white mixture.
Spoon the egg white mixture on to the pizza pan, and spread it evenly into a round pizza crust shape. Bake the crust in the oven for 10-15 minutes until golden brown on top.
While the pizza crust is baking, brown the ground beef and season to taste with taco seasoning. Set aside. In a medium size bowl, add the softened cream cheese, sour cream, and taco seasoning to taste. Whisk until smooth.
Remove the pizza crust from the oven and top with the cream cheese/sour cream mixture, then the ground beef, and finally the 4 cups of shredded cheddar cheese. You can add any other low carb, keto, or carnivore toppings that you prefer.
Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted. Let the pizza cool for 5 minutes before cutting into slices. Enjoy!
