I was inspired to create this recipe because I was looking for a dairy free waffle and bread substitute. I try to limit my dairy intake because it causes me unwanted GI symptoms. I do have dairy occasionally as a treat, and I eat raw dairy which is easier to digest when I can find it in my area.
With only 4 ingredients, these carnivore egg yolk waffles are super easy to make, and the recipe is easy to modify to your liking. You can substitute any fat that you like for the bacon grease such as ghee, tallow, or lard. If dairy isn't a problem for you, feel free to use butter. Some people who don't tolerate dairy do tolerate butter, but it depends on the person.

Equipment
Ingredients
12 egg yolks
50 g bacon grease melted
¾ tsp Starch Free Bakewell Cream or Baking powder
1/4 tsp sea salt
Directions

Preheat the waffle iron.
Add all the ingredients to a mixing bowl. Whisk or mix until well combined.
Pour the batter into the hot waffle iron and cook until the light indicates that the waffle is done. Remove the waffle from the waffle iron and serve immediately. When making large batches, cool the waffles on a baking rack. This recipe can also be used to make muffins. Bake the muffins in the oven at 350 degrees farenheit for 20-30 minutes until they are slightly brown around the edges and a toothpick comes out clean.
These egg yolk waffles are so versatile! I've used them for sausage gravy, for sandwiches and burgers, and for eggs Benedict!
Have you tried carnivore egg yolk waffles or muffins? What dishes did you use them for? If you try this recipe, I'd love to hear how you like it. Please share your feedback in the comments, or tag us on IG @animalbasedrn.
