This Keto Bacon Wrapped Meatloaf with ground beef and Carnivore Crisps Beef & Organ Blend Four is moist, flavorful, and packed full of nutrients. If you don't love the taste of organ meats, this is a great way to reap the benefits of these super-foods without the flavor! This recipe is almost carnivore and can be easily modified to contain no plant ingredients by omitting the ketchup and doubling the heavy cream.

I was inspired to create this recipe after having the opportunity to try Carnivore Crisps Flour! This recipe uses Carnivore Crisps Beef & Organ Blend Flour. Do you like organ meats? I don't care for the taste and texture, so it's been a struggle to find ways to incorporate these super foods into my diet. I was surprised that this flour doesn't taste like organ meats at all! So, I thought this flour would be a great addition to meatloaf to act as a binder while providing the nutritional benefits of organ meats without the taste!

WHAT ARE ORGAN MEATS?


Organ meats, which are also called offal are the organs of animals that can be eaten. They are considered super-foods because they are so nutrient dense and were often eaten by our ancestors in a time when the whole animal was honored and eaten at harvest. Some common organ meats that people eat nowadays are: liver, tongue, heart, kidneys, brain, sweetbreads, and tripe.


WHAT ARE the benefits of eating ORGAN MEATS?


  • Liver: The most nutrient dense of the organ meats. Liven is packed full of bio-available vitamins that may help reduce the risk of heart disease and Alzheimer's disease.

  • Heart: This organ meat is rich in coenzyme Q10 (CoQ10). CoQ10 is an antioxidant that has many reported health benefits. For example it may help treat heart failure, could help with fertility, could help reduce headaches and migraines, could help with exercise performance, may help with diabetes, may help prevent cancer, may be good for brain health, and may help support healthy skin aging.

  • Kidneys: This organ meat is rich in omega 3 fatty acids and has anti-inflammatory properties.

Ingredients


Directions


  1. Preheat the oven to 350°F.

  2. Add the ground beef, eggs, heavy cream, ketchup, flour, salt and pepper to a large mixing bowl. Mix all the ingredients well using your hands. Place the mixture into a baking dish and form it into a meatloaf shape. Layer the bacon on the outside of the meatloaf and tuck the ends of the bacon under the meatloaf. I like to weave the bacon for a more elegant presentation.

  3. Bake the meatloaf in the oven for about 60 minutes or until the internal temperature reaches 160°F. For the last 5-10 minutes of cook time, move the meatloaf to the top rack of the oven, and broil the meatloaf to crisp up the bacon. There will be a lot of fat in the bottom of the pan. Remove the meatloaf from the pan and place it on a large plate or platter and slice. You can save the fat drippings and also serve it drizzled over the meat if you wish.
