I'm thrilled to have recently become a part of my church's cookie baking team, where I'm putting my passion for baking and cooking to a purposeful use. Fueled by a genuine love for both crafting delicious treats and helping others, I've enthusiastically taken on the task of creating low carb, keto, and gluten-free cookies that cater to the needs of those grappling with dietary restrictions and diabetes. With each cookie baked, I'm reminded that my efforts are not just about flavors and ingredients, but about selfless service and sharing the love of God through the simple joy of a thoughtfully baked treat.

If you're on a keto, low-carb, or gluten-free journey, these scrumptious chocolate chip cookies are about to become your new favorite treat. Packed with wholesome ingredients and a dash of chocolatey delight, these cookies are not only a delight for your taste buds but also a perfect choice for health-conscious individuals and families. They're kid-friendly too, making them a versatile and enjoyable snack for everyone.

Indulge in Guilt-Free Bliss with Keto Chocolate Chip Cookies

Nutritional Benefits:

These keto chocolate chip cookies offer a guilt-free way to satisfy your sweet tooth. With coconut flour as the base, they're low in carbohydrates and high in fiber. The use of Lakanto Monk Fruit Sweetener with Erythritol Golden provides a delightful sweetness without the blood sugar spikes associated with traditional sugar. Plus, these cookies are gluten-free, making them suitable for those with gluten sensitivities. The inclusion of dark chocolate baking chips not only adds a rich and luxurious taste but also provides antioxidants. Share these cookies with your kids, and they'll be devouring a treat that's both delicious and nourishing without all the sugar!

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a cookie sheet with parchment paper to prevent sticking.

  2. In a small bowl, combine the coconut flour, baking soda, and salt. Set aside.

  3. In a large mixer bowl, beat the softened butter, Lakanto Monkfruit Sweetener, and vanilla extract until creamy and well combined.

  4. Add the eggs, one at a time, beating well after each addition.

  5. Gradually beat in the coconut flour mixture until a dough forms.

  6. Stir in the Lily's Dark Chocolate Baking Chips, evenly distributing the chocolatey goodness throughout the dough.

  7. Using a cookie scoop, drop the dough onto the prepared cookie sheet. Gently press each ball of dough into a cookie shape, as these cookies won't spread much during baking.

  8. Bake in the preheated oven for approximately 16 minutes for a 3 inch cookie or until the edges turn a delightful golden brown. Adjust the cook time based on the size of the cookie.

  9. Once baked, remove the cookie sheet from the oven and allow the cookies to cool for about 15 minutes on the sheet. This helps them firm up nicely.

  10. Once the cookies are firm to the touch, carefully transfer them to a wire rack to cool completely.

  11. These delectable treats can be stored at room temperature in a sealed container for up to 1 week. For extended storage, keep them in the refrigerator or freezer.

Indulge in the goodness of these keto chocolate chip cookies, knowing that you're treating yourself to a snack that aligns with your healthy lifestyle goals. So go ahead, whip up a batch, and relish the joy of a sweet treat without compromising your dietary choices.
