KETO CHOCOLATE CHIP COOKIES
Ingredients
1 cup organic coconut flour
1/2 tsp baking soda
1 tsp sea salt
2/3 cup unsalted butter, softened
1 1/4 cup Lakanto Monk Fruit Sweetener with Erythritol - Golden
1 tsp vanilla extract
6 large eggs
Directions
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a cookie sheet with parchment paper to prevent sticking.
In a small bowl, combine the coconut flour, baking soda, and salt. Set aside.
In a large mixer bowl, beat the softened butter, Lakanto Monkfruit Sweetener, and vanilla extract until creamy and well combined.
Add the eggs, one at a time, beating well after each addition.
Gradually beat in the coconut flour mixture until a dough forms.
Stir in the Lily's Dark Chocolate Baking Chips, evenly distributing the chocolatey goodness throughout the dough.
Using a cookie scoop, drop the dough onto the prepared cookie sheet. Gently press each ball of dough into a cookie shape, as these cookies won't spread much during baking.
Bake in the preheated oven for approximately 16 minutes for a 3 inch cookie or until the edges turn a delightful golden brown. Adjust the cook time based on the size of the cookie.
Once baked, remove the cookie sheet from the oven and allow the cookies to cool for about 15 minutes on the sheet. This helps them firm up nicely.
Once the cookies are firm to the touch, carefully transfer them to a wire rack to cool completely.
These delectable treats can be stored at room temperature in a sealed container for up to 1 week. For extended storage, keep them in the refrigerator or freezer.
