KETO CLOUD CRUST PIZZA

This keto cloud crust pizza looks, feels, and tastes like real pizza crust without all the carbs and plant ingredients other than a little bit of Italian spices. It's grain free, gluten free, and low carb.

The best pizza I've ever made!

One of my son's favorite meals is pizza! For several years I've been making him a chicken crust pizza that's carnivore approved. However, he's been wanting a more traditional style pizza with sauce and a dough like crust. So, I created this recipe, developing the crust from my carnivore cloud bread recipe, adding in Parmesan cheese and Italian spices. If you haven't tried my carnivore cloud bread recipe, it's my favorite carnivore bread made with egg whites.


This recipe is keto approved, however it can be easily modified for a carnivore diet. Just omit the Italian spices and pizza sauce. You can even substitute ricotta cheese or a cheese sauce for the pizza sauce. This is now my son's new favorite pizza, and he told me I should open a restaurant, ha-ha!

Ingredients


Pizza Crust:

Optional Toppings:

  • Primal Kitchen Pizza Sauce or Marinara sauce

  • 16 oz shredded mozzarella cheese

  • Any of your favorite low-carb, keto, or carnivore toppings

Directions


  1. Preheat the oven to 400°F and grease a 16" pizza pan with butter, ghee, lard, or tallow. Put the 1/2 stick of butter in the freezer.

  2. Add the egg whites to the bowl of a stand mixer and whip until stiff. Then, turn the speed to low and add in the egg white protein powder followed by the beef gelatin powder, Italian spices, salt, and Parmesan cheese. Finally add in the egg yolks one at a time. Mix until well combined.

  3. Remove the butter from the freezer and grate it into the mixing bowl. Fold the grated butter into the egg white mixture.

  4. Spoon the egg white mixture on to the pizza pan, and spread it evenly into a round pizza crust shape. Bake the crust in the oven for 10-15 minutes until golden brown on top.

  5. Remove the pizza crust from the oven and top with the pizza sauce, shredded mozzarella cheese, and any of your favorite toppings. For a carnivore style pizza you can substitute ricotta cheese or Alfredo sauce for the pizza sauce and omit the Italian spices.

  6. Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted and starts to lightly brown. Let the pizza cool for 5 minutes before cutting into slices. Enjoy!


Store any left over pizza in the refrigerator. To reheat the pizza, put it in the oven at 350 degrees farenheit for 10-15 minutes until the cheese is melted. It's pretty tasty reheated as the crust gets extra crispy!
